A weekend favorite at my house!  Of course, you can use just about any fruit you'd like with these pancakes, or none at all!


Blueberry Pancakes

1 3/4 cups milk
1/4 cup vinegar
2 cups flour
1/3 cup sugar
2 tsp baking powder
1 tsp baking soda
2 eggs
1/4 cup butter (salted), melted
Fresh blueberries


1)  In medium bowl, mix the milk and vinegar.  Let sit for 5 minutes.
2)  Mix dry ingredients in a large bowl.
3)  To the milk/vinegar mixture, add the eggs and butter.  Whisk until well blended.
4)  Pour liquid into dry ingredients, mix well using whisk.
5)  Heat large skillet over medium heat & lightly coat bottom with coconut oil (my favorite, but vegetable oil will work, so will cooking spray).  Test skillet by flicking a few drops of water in it.  When the water sizzles, it's ready. 
6)  Pour pancake batter in to desired size, and immediately add fresh blueberries to the pancakes in the skillet.  When bubbles on top of pancakes start to pop, they're ready to flip!
