"Mooshroom" Stir Fry, Minecraft inspired

My oldest, Abby, is addicted to Minecraft.  She's been talking about an update that's due tomorrow to the app version of the game (she plays on an ipod).  So I thought it might be fun to make a Minecraft inspired dinner.

In the game, there are these creatures called Mooshrooms.  From what I gather, they're cows that grow mushrooms.  And mushrooms are a big part of the game, I guess.

I thought about making a mushroom stew/soup, like in the game, but it's super hot here in Arizona right now.  Also, 3 out of 4 of my kids hate mushrooms.  I thought that maybe if they were in a stir fry, I might get the kids to try them.  And guess what?  All of my girls tried the mushrooms in this recipe.  And they all loved them.  Sam, well, he at least ate most of the stir fry.

I also thought this would be a great way to get the kids to eat some veggies without having to hide them.  This is really a veggie-loaded recipe, and I let the kids choose the vegetables I would add.  It's funny how when you involve kids in a meal, they are more likely to try it.  They devoured it!

Here's the recipe, and it makes a ton.  I'm guessing easily 8 servings:

Stir fry sauce:

1/2 cup soy sauce
2 T vinegar
1/2 cup water
1 1/2 cups beef broth
1/4 cup brown sugar
1/4 tsp ground ginger
1/4 tsp red pepper flakes
2 cloves garlic, minced
1/4 cup cornstarch

Whisk it all up.  Set aside.  (You'll probably have to whisk it again before adding to the recipe.)

Stir fry ingredients:

1 lb stir fry beef (Or use a thin cut steak & slice it up.  My store had cross rib steak on sale, so I grabbed that and sliced it into 1/2" thick pieces.)
1 lb white mushrooms, stems removed & sliced
1 red bell pepper, sliced
Small bunch of broccoli, use the florets
3 oz snow peas
8 oz carrots, cut into medallions or thin slices.  (I bought a 1 lb bag of carrot chips and used half.)
3 ribs celery, sliced
2 bunches green onions, chopped
8 oz can of sliced water chestnuts, drained
8 oz canned baby corn, drained, and cut the baby corn in half
2 T oil (peanut, olive, coconut, vegetable, whatever you have)

1)  Start by preparing the beef.  Slice it, or if you've purchased it already sliced, then don't worry about it.  Put it in a bowl and lightly coat it with soy sauce.
2)  Get to chopping veggies.  This really takes very little time.  Wipe the mushrooms with a damp cloth before slicing.
3)  Heat the oil in a large skillet or wok.  I used my large cast iron skillet.  Fry the beef until cooked through. 
4)  Add the veggies.
5)  Add the stir fry sauce.  Use as much or as little as you'd like.  I really only used about 2/3 of the sauce I made. The rest can be easily refrigerated and saved.
6)  Stir it up!  Flip the veggies around, being sure not to overcook them.  You want them to stay crisp, but you want them hot, too.

Voila!  That's it!  Serve over rice.

Homeschool!

So this year, I have decided to homeschool my kids.  There are many reasons why, but here are a few:

1)  Common Core.  Need I say more?  What a mess!
2)  Negative influence from other kids.  Not that I think other kids are bad, but I have put a lot of effort into bringing up my kids right.  I've noticed when they're in school, a lot of behavior rubs off on them, and when breaks come, it takes a few days to get "my" kids back.  Not to mention, they've learned things at school I wish they hadn't.  Not all socialization is good socialization, and in school, because they experience very little adult interaction, they learn most of their social skills from other kids.
3)  When you homeschool, you are able to easily and completely customize your child's curriculum. 
4)  We recently learned my son has autism.  He struggles in school with other kids making fun of him, excluding him because he's "weird," and he has trouble being in a regular classroom.  When he's at home and has a patient parent teaching him, he does much better at maintaining focus.  Not to mention, when he's home, his behavior is just better. 

I can't wait to get going with school!  I'm both excited and scared.  Actually, I'm really scared.  I suppose those typical parent worries are amplified right now because of this decision.  The "what ifs" are there and they are unrelenting.  "What if I miss something?" is a big one for me.  I just have to trust in myself, know that I can do this, and that my kids will be better off for it. 

I've decided to use the Easy Peasy homeschool program as a guide.  Will I follow it 100%?  I dunno, probably not.  However, I know it will help me to make sure they are learning what they should.  And it's FREE.

Summer recipes

I'm still confused by Blogger!  I added pages, but I can't figure out how to add to my pages!  I know I can edit them, but I wanted to post a new recipe, and I don't want to have to post right below my Blueberry Pancakes recipe!  Oh well . . .

Here's a super yummy, perfect potato salad recipe (in my opinion), that I think your family will totally love.


Potato Salad

8 medium potatoes
1 cup mayo
1 cup Miracle Whip (yes, this is necessary, do not try to use 2 cups of mayo)
2 T vinegar
2 T sugar
1 T mustard (prepared, not dry)
1 t salt
1 t garlic powder
1/2 t black pepper
3 celery stalks, chopped
1 large onion, diced
Small jar of gherkins, drained, pickles chopped (can use less, I like a LOT of pickles)
6 eggs, hard-boiled, peeled, and chopped

Mix it up.  Yummy!  This is excellent if chilled overnight.

I Bought a Swimsuit!

So . . .

Today, the kids had swimming lessons, and afterwards, since my husband was in town, we took them swimming.  More like, he took them swimming, and I watched.  In the heat.  In jeans.  And a 3/4 sleeve shirt.  I thought I might pass out.  I started wondering if anyone would notice if I just slipped in the pool in my shirt and underwear.

So why wasn't I swimming with them?  You see, I'm one of those women.  I obsess about how I look, how fat I am.  I mean, often times, I look in the mirror, and whisper the word "blubber."  I can't enter the bathroom without pulling up my shirt and looking at my side profile, sucked in.  I pinch my fat, shake the fat on my sumo-wrestler-like arms, pull the fat on my face so that I can see how I'd look thinner.  How I used to look.

I have been aware of my weight for as long as I can remember.  Well, maybe not.  There are a few memories from early childhood where my weight never entered my mind.  I don't come from a "fat" family.  My parents are both thin, so are my siblings.  Yet, here I am.  Blubber.

I've lost weight before.  I always gain it back.  Before kids, I was a size 6.  Now, I have to squeeze in a size 16.  I am trying to come to terms with my size, because, apparently, it's me.  It's who I am.  And I don't like feeling bad about who I am.

So, I got a suit.  And I researched it first, you know I did!  My Google searches included:

"Bathing suit that looks best on fat arms"
"Bathing suit that is most slimming"

I wished they made a bathing suit that would camouflage cellulite!  Ha!  Hmmm . . .  maybe I should have bought a wetsuit.

Anyway, I saw how much fun the kids had in the pool with my husband today, and I want to be a part of it.  I want to give my daughter pointers on how to float on her back while actually showing her.  I want to be a part of the laughter and the splashing.  They don't care about my blubber.  And really, I doubt anybody else does, either.
